Paul Bernhard of Bancroft, Iowa is known globally as “Mr. Pork Chop”.
He developed the idea for a 1.5″ thick pork chop that later became known as the “Iowa Chop”. He began selling and promoting these chops in the 1970s when he was leading the Kossuth County Pork Producers. He began (along with other hog farmers) grilling them for church dinners and community banquets.
Later, When he became president of the Iowa Pork Producers Association, the “Iowa Chop” became a national favorite. In 1983 he started selling his chops along the Des Moines Register’s Annual Great Bicycle Ride Across Iowa (RAGBRAI). He would set up his location on a farm yard along the route hawking his wares by yelling “Pooooooooooorrk Chooooooooooop!”.
